Ingredients
- 1 cup quinoa
- 2 cups water
- 1 1/2 cups lentils, canned, drained and rinsed
- 4 scallions, chopped
- 1/4 cup dill, fresh, chopped
Directions
Prep
- Chop scallions and dill
Make
- Add quinoa and water to a small saucepot & bring to a boil
- Reduce heat and simmer for 10 minutes or until all liquid is absorbed
- Remove from heat and fluff with a fork
- Add warm cooked quinoa to a mixing bowl with lentils, dill, and scallions
- Add enough dressing to coat and serve warm or chilled
Dressing
Ingredients
- 1/4 cup olive oil
- 2 Tbs red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced or pressed
- 1 Tbs lemon zest
- salt, to taste
- black pepper, to taste

- Mince or press garlic
Make
- Add all ingredients to a mason jar with a lid and shake to blend
