This dish is packed with big creole flavor and is filled with shrimp and four different veggies! You get lean protein and a lot of nutrients as the shrimp and veggies come together in one pan to deliver a tasty meal. A little prep gives you a quick meal the whole family will enjoy. You can also add a side of brown rice or cauliflower rice to complete the meal.

Ingredients
  

  • 1 1/2 lb shrimp peeled and deveined
  • 2 Tbs Creole seasoning
  • 2 Tbs olive oil
  • 2 zucchini chopped
  • 1 red bell pepper chopped
  • 1 red onion chopped
  • 1 lb green beans snapped and cut into 2″ pieces
Creole Seasoning Mix
  • 1 1/2 Tbs garlic powder
  • 1 1/2 Tbs onion powder
  • 2 Tbs sweet paprika
  • 1 tsp smoked paprika
  • 1 Tbs basil dried
  • 1 Tbs thyme dried
  • 1 Tbs oregano dried
  • 2 tsp cayenne pepper or to taste
  • 1 tsp black pepper
  • 1 tsp salt or to taste

Method
 

Prep
  1. Place all spices in a mason jar with a lid and shake to combine. Store any leftovers in a cool, dry place for up to 3 months.
  2. Toss shrimp with 1 tablespoon of Creole seasoning and let stand while you prep other ingredients.
  3. Chop zucchini, pepper, onion, and green beans.
  4. Preheat oven to 375°F.
Make
  1. Toss all vegetables with shrimp, olive oil, and an additional tablespoon of seasoning.
  2. Place on lined sheet pan and spread out evenly [for easy clean-up line sheet pan with foil first, then a sheet of parchment paper.]
  3. Bake for about 20 minutes until shrimp is cooked through.

  • 2 cup frozen mixed vegetables (pick your family favorites!)
  • 2 cup quinoa cooked
  • 2 cup chicken diced, cooked
  • 1/4 cup soy sauce
  • 1 Tbs minced garlic
  • 1 Tbs sesame oil
  • 1 Tbs ginger
  • 2 green onions sliced
  • 1 Tbs olive oil
  • 2 tsp sesame seeds

Method
 

Prep
  1. Mince garlic and ginger.
  2. Slice scallions.
Make
  1. Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and ginger, and sauté for 1 minute.
  2. Add the frozen mixed vegetables and cook until tender, about 5 minutes.
  3. Add the pre-cooked chicken, stir to combine.
  4. Add the cooked quinoa and soy sauce, stirring to combine.
  5. Drizzle with sesame oil, and sprinkle with green onions and sesame seeds.

Ingredients
  

  • 1 8 oz. can pineapple tidbits, 3 tablespoons juice reserved
  • 5 tsp rice vinegar
  • 1 Tbs low sodium soy sauce
  • 1 Tbs ketchup
  • 2 tsp brown sugar
  • 1 lb flank steak
  • 1 tsp cornstarch
  • 3 tsp sesame oil divided
  • 1 Tbs garlic minced
  • 1 cup mushrooms sliced
  • 1 cup snap peas
  • 1 sweet pepper sliced

Method
 

Prep
  1. Cut the flank steak into strips.
  2. Mince the garlic.
  3. Slice the mushrooms and sweet pepper.
Make
  1. Whisk the reserved 3 tbsp pineapple juice, vinegar, soy sauce, ketchup, and sugar in a small bowl until smooth. Place beef in a medium bowl; toss with 2 tablespoons of the sauce. Let marinate for 20 minutes.
  2. Add cornstarch to the remaining sauce and whisk until smooth.
  3. Heat 2 teaspoons oil in a large nonstick pan over medium-high heat. Transfer the beef to the pan. Whisk any remaining marinade into the bowl of sauce. Cook the beef, stirring every 1 to 2 minutes, until tender, about 4-5 minutes. Transfer the beef to a plate.
  4. Add the remaining 1 tsp oil to the pan and heat over medium heat. Add garlic, stirring constantly, until fragrant, about 30 seconds. Add the mushrooms, snap peas and sweet pepper to cook, stirring often, until just tender, about 3 minutes. Pour in the sauce and cook, stirring, until thickened, about 30 seconds. Add the beef and pineapple and cook, until heated through.
  5. Serve over rice, quinoa, or cauliflower rice.

    Make
    1. Add ingredients to glass mason jar fitted with lid – shake to combine and store in a cool, dry place.

      Prep
      1. Preheat oven to 375° F. Line baking sheet with parchment paper.
      Make
      1. In a glass bowl, toss chicken with olive oil and our BBQ Seasoning mix.
      2. Season with salt and pepper.
      3. Roast until the internal temperature of chicken reaches 165° F, about 20-25 minutes.

      3. Mince garlic and chop rosemary.
      Make
      1. In a small bowl, whisk together mustard, maple syrup, garlic, and herbs.
      2. Season with salt to taste.
      3. Brush paste over the surface of the pork loin.
      4. Roast uncovered for about 45 minutes or until internal temperature reads 145° F.
      5. Remove the roast from the oven and let it sit for about 10 minutes.
      6. Slice into medallions and serve with any remaining juices in the pan.
